Background:

Hunt Cellars is an extraordinary place. Hunt Cellars produces boutique quantities of almost all red wines that win a disproportionate number of awards. David Hunt, the owner and winemaker is blind, but he plays the piano and names most of his wines after musical terms. David says that blindness makes his palate and nose extra-sensitive.

David spent years looking for the perfect venue for his wines and eventually settled on a uniquely beautiful property of over 550 acres in the foothills and mountains of Creston. This area met Davids criteria for topography, soil composition, unparalleled beauty, and ideal terroirs – its varied elevations and mineral soil composites mirror some of the world’s great wine regions.

The Hunt Family decided to name their vineyard, “Destiny Vineyards, in honor of their new baby girl they named Destiny who was born in 1996.  Destiny Vineyards first planting consists of: Cabernet Sauvignon, Sangiovese, Sauvignon Blanc, Merlot, Syrah, Petite Syrah, Cab Franc, Viognier and Zinfandel, and In 1997 they began producing their first releases of memorable wines.

Hunt Cellars 2004 Cabernet Sauvignon “Cab 9” / Paso Robles

Opening with a lovely California nose of violets and lavender mingling with highlights of spice, when sipped slowly, the wine unfurls rich fruit layers of currants, cherry, and blackberry.  Deeper notes of chocolate and truffles give the wine a very nice depth.  Full-bodied and warm on the palate, the finish is soft and lingering.  A great food wine, pair a bottle with a tender, rare roast beef or savor a Vosges Budapest truffle with your glass. Either combination is simply delicious.
