Mini Vampire Slayer, Basil and Romesco Grilled Cheese

  • ½ cup roasted, unsalted almonds
  • ¼ cup olive oil
  • 2 TBSP roughly chopped or shredded Parmigiano Reggiano
  • 1 jar (16oz) roasted red peppers
  • 1 garlic clove, roughly chopped
  • 1 TSP salt
  • 1 ½ TSP white wine vinegar
  • 2 TBSP butter
  • 8 slices of bread
  • 8 large, fresh basil leaves
