Roasted Chile Chicken

Ingredients:

  • 1 Whole Chicken, rinsed and cleaned
  • 10 whole Garlic cloves
  • 1 Lime, halved
  • ¼ bunch Cilantro

For Marinade:

  • 1 cup Red Chile Powder
  • 1 cup Garlic, minced
  • ¾ cup Kosher Salt
  • ½ cup Sage, chopped
  • 1 cup Canola oil

Preparation:

  1. Stuff clean, whole chicken with garlic, lime and cilantro
  2. Generously coat entire chicken with chile marinade, cover and refrigerate overnight.
  3. Preheat oven to 325 degrees; coat chicken once more with marinade.
  4. Roast chicken in 325 degree oven for 45 minutes.
  5. Partner with your favorite seasoned rice and vegetables, then enjoy!
