Jumbo Fresh Water Spot Prawns (whole)

Serves: 4

Ingredients:
3 tbls. Seasoned Butter
3 Ibs. of Fresh Water Spot Prawns

Seasoned Butter Ingredients:

1 tbls. Fresh Garlic (finely chopped)
1 tspn. Fresh Parsley (finely chopped)
TT Salt and Pepper

Procedure:

1. Melt butter, set aside. Butterfly prawns. Use kitchen shears or a sharp heavy knife to cut lengthwise through centers of shells and meat, top to bottom. Brush meat with seasoned butter.

2. Place prawns on a a cookie sheet, broil about 10 to 12 minutes or until flesh turns white. Or BBQ for 10 to 12 minutes or until flesh turns white. Serve over Risotto or pasta of choice.
