Superfood Ravioli Salad
Ingredients:
1-8oz | Three Bridges Superfood Ravioli |
2 cups | fresh spinach, tightly packed and thinly sliced |
2 cups | red cabbage, thinly sliced |
2 | large carrots, peeled and sliced |
1 | red bell pepper, sliced into matchsticks |
1 | cucumber, cut into half slices |
1/2 cup | fresh parsley leaves, torn |
2 tbsp | sesame seeds |
For the Dressing | |
1/3 cup | olive oil |
1/2 cup | lemon juice, fresh |
1 tsp | cayenne pepper |
1 tsp | honey |
1/2 tsp | kosher salt |
Instructions:
- In a jar with a tight fitting lid add all salad dressing ingredients together and shake to blend. Set aside.
- Cook Ravioli according to package directions. Dip in cold water to stop cooking. Drain. Place ravioli in a large mixing bowl.
- Add the spinach, cabbage, bell pepper, carrots, cucumber & parsley.
- Pour desired amount of dressing over the salad and toss until everything is coated.
- Sprinkle on sesame seeds. Serve & enjoy!
