At Seven Oxen Estate Wines, located in the rolling hills of Paso Robles’ Westside, they purposely keep yields low to guarantee the highest quality fruit possible and to ensure their wines reflect the unique character of the vineyard. It’s a lot of dedication for some very small lots, but that simply makes each bottle all the more special.

A bouquet of blackberries, cherries, blueberries, and spice greets the senses. The palate showcases flavors of black cherry, plum, and blueberry that open up into suggestions of minerals, anise, and white pepper. Dark fruit and supple tannins make this wine ideal to pair with your favorite BBQ. Only 78 cases produced.

Aromas of raspberries, cherries, and pomegranates mingle with traces of game and spice on the nose. A sip offers bright red fruit flavors, which unfold into highlights of white pepper, minerals, and smoked game. A wine with hearty flavors and plush tannins, open a bottle next time you have pork belly sliders with a bit of spice to them. 182 cases were made.

Fragrances of blueberries, cherries, chocolate, and anise rise up from a glass. Black cherry, blueberry, and plum flavors emerge on the palate along with notes of minerals, mocha, and anise. A rich wine with plentiful tannins, a spicy beef stew would make a fine companion. Only 43 cases produced.
