“Banana-Chocolate Chip Frozen Fruit Cream”

“My frozen fruit cream recipes are totally vegan and totally fabulous, decadent, full-fat, fruit “ice creams” with no dairy.  These luxuriously creamy, super-thick desserts are specially designed for those of you who are very physically active, such as runners, high-mileage walkers, construction workers, landscapers, and aerobics instructors.  To build and sustain all the energy you require, you need a healthy dose of calories packed with easily digestible proteins, natural sugars, beneficial fats, vitamins, and minerals, plus satisfying flavor.

The following recipe also makes a stupendous dessert treat for family and friends and serves as a meal substitute, if desired.  There are two other fruit cream recipes in my book, Raw Energy, and these are some of my favorite raw snacks to indulge in when I want something sweet, yummy, filling, heavenly, and good for my body, mind, and spirit.  Enjoy!”

Banana–Chocolate Chip Frozen Fruit Cream

This sinfully delicious treat is an ultra-healthful banana–chocolate chip macaroon ice cream full of chewy bits of pure fuel that tastes of sweet indulgence. Think of it as ice cream with all of the good and none of the bad ― it just doesn’t get any better than this!

1 cup almond or walnut milk (page 98)

2 medium or 3 small frozen bananas, cut into chunks

⅓ cup raw cashews

1/4 cup unsweetened coconut, finely shredded

2 tablespoons raw cacao nibs

1 tablespoon raw honey or maple syrup

1 tablespoon raw, unrefined coconut oil

1 teaspoon vanilla extract

pinch of sea salt

1 Put the nut milk, bananas, cashews, coconut, cacao, honey, oil, vanilla, and salt in a blender and blend on medium for 30 seconds, then blend on high until the texture resembles thick ice cream, about 30 seconds longer. Expect tiny bits of coconut and cacao nibs throughout.

2 Serve immediately in your favorite bowls, eat slowly, and savor the flavor. If the recipe is allowed to thaw a bit, it can be consumed as a shake.

Yield: 2 servings
